Classrooms for Malawi is a new charity formed by individuals from a variety of backgrounds and age groups, most of whom are in some way involved with and enthusiastic about developing and improving education in Malawi. Fergal Gallanagh, our QA Manager, who has been involved with the charity for the past few years, organised an International Food Day at INCo to raise money for their projects. 

The idea was simple: at INCo we have a number of employees of different nationalities and cultures. We asked them to cook and bring in food from their home countries (or their favourite foods) to be shared with all of us in exchange for a donation to the charity.

This is what our newly chefs prepared for us:

Nina (Congo): Caterpillars & CricketsChicken in a Peanut Sauce  and Cassava Cake 

Louis (Belgium): Thai Chicken Green Curry with Special Fried Noodles 

Domas (Lithuania): Kugelis, which is a kind of potato pudding

Francesco (Italy): Spaghetti alla Amatriciana and a tray of canapes made with Scrambled eggs infused with White Truffle Butter

Sarah (Scottish): Toffee Cheesecake 

Kenny (Scottish/Indian) and Nims (Scottish/Indian): different mixed Pakora 

Martin (Scottish): Chinese Chicken Soup 

Lexie (English): Special Fried Rice with Spicy Curry in Chinese Style
